The star of your cheese platter, this little knife is elegant and functional for slicing hard cheeses and charcuterie.

These knives are only available in AEB-L Stainless Steel.

STEEL CHOICE

High Carbon Steel

These knives are made from either 80crv2 or 1095 steel as they hold up quite well even if you tend to beat up your knives.

Stainless Steel

These knives are made from AEB-L steel, which scores high across sharpness, ease in sharpening, toughness and edge stability.

Damascus

Damascus steel, made in house uses alternating layers of 80crv2 and 15n20, and is then deeply etched, so you can feel the different layers. If you are really looking for a piece of art, this is it.


HANDLE MATERIAL CHOICE

Figured Wood

Stabilized, figured, and dyed wood for the handles are available for all of my knives. All figured wood is either dyed/stabilized in house or sourced from a trusted supplier. If you have anything you are looking for in particular, please provide comments and I will try and work with you to get the desired materials.

Hybrid/burl

Made in house-Dyed, stabilized burl mixed with colored resin to give a uniquely patterned handle. I always have a collection of blocks waiting for their knives. Ask for the current selection or ask for a custom combination. This is a personal favorite.
